1) Ease of target identification both at the event and on video. With limited uniforms, you know who is who and what is going on.
2) Limiting ammo or mag types makes force multiplier weapons like the SAW and the Sniper Rifle more effective on the field.
3) Knowing the other players have a vested interest in the game and it's outcome. If they purchased gear or made sure to have the right stuff, it shows they care about the event and will do what's necessary to attend.
4) A heightened sense of immersion. When people around you have the correct gear, they match and they know their role = this makes it a more enjoyable experience for everyone. Would you want to be cast as an actor in a Vietnam movie where the US Soldiers all use M4A1s? Of course not, that would be stupid, it would cheapen the movie and the experience. Why not play Airsoft with the same mentality?
I think you also make a good point that many of us have been playing this game for years. At least 9 for me. I suppose that does make the same old games not very exciting. A pickup game with a bunch of kids in jeans and tennis shoes with a gaggle of random AEGs behind a housing development in some trees is not fun anymore. Been there and done that when I was a newb. It was time to graduate to something else.
You also notice that at some of the OPs. A lot of the people attending them have been playing in this community 3 years or less, you lose the veteran players who have been around for 8-9 years because nothing new ever happens. Maybe organized events with restrictions are also an escape from that.
