I've always been a fan of house layouts. Two or three bedrooms, kitchen, and a couple of smaller spaces, such as closets and bathrooms. Seriously on the bathrooms. Unless you really liked the boardgame "Clue". Then bathroom spaces are unnecessary in a house.
Also, houses tend to be pretty ugly structures for CQB. Multiple entries into common rooms, large window spaces, and random corners make people work a good bit harder. The down side is that if you end up trapped inside a structure with no way out, it's probably not going to end well.
Another option, if you have power available onsite is to build a strip club. I have yet to see an environment that is worse for CQB than a fairly dark room filled with tables and chairs and colored lights moving randomly and mis-timed strobes, bad angles, random cover (bars, DJ booth, stages, Champagne Room), and multiple entrances / exits. Especially with load pulsating music . Strip clubs are a tool of the devil when it comes to CQB. Worse than airplanes, and that is saying something.
